Homemade macaroni with spinach, fresh ricotta and prawns (caught with traps)
Our recipe of fresh macaroni keeps the simple flavours of our sea and our land with the fundamental choice of the fresh and high quality ingredients, capable of offering a unique flavour to a typical first course of the Aeolian Islands
Ingredients (4 servings)
300 g green macaroni
250 g fresh ricotta cheese
5 sliced cherry tomatoes
basil
mint
1 onion
4 tablespoons extra virgin olive oil
300 g fresh prawns (caught with traps), peeled
Preparation
Brown the finely chopped onion in oil for a few minutes, adding 1 wooden spoon of water. When it is slightly gilded, add prawns, ricotta, basil, mint and the slices of tomato. Let cook everything for 5 minutes and add salt and pepper if necessary. Drain the pasta al dente, mix the whole and add a little bit of caciocavallo siciliano cheese according to your taste
