Sgaloppa of imperial garfish with citrus fruits

With its high-protein qualities and its low fat content, the Mediterranean spearfish is a fish characterised by its excellent nutritional properties. Filippino explains the steps to you to prepare an incredibly simple dish with this delicious ingredient.

Ingredients (4 servings)

600 g slices of Mediterranean spearfish (scaled)
50 cl light extra virgin olive oil
½ tablespoon chives

For the marinade of the Mediterranean spearfish:

800 g coarse sea salt
50 g granulated sugar
grated lemon and orange peel

Preparation

Mix the salt, the sugar, the lemon peel, the chives and the orange. Cover the slice of the Mediterranean spearfish and let it marinate for 3 hours in the fridge, covered with a clingfilm. Then remove the salt by drying it with the paper towel or a tea towel. Slice and cover with oil.
Just when you serve, remove the oil and plate up with the chives and small strips of lemon.
Serve fresh.
